SIMPLE OVERNIGHT OATS

Ingredients

1/2 cup of Old Fashioned Oats

1/2 cup of Fairlife 'Fat Free' Milk

1/3 cup blueberries (great source of antioxidants)

1-2 tbsp of Walden Farms blueberry sugar free syrup

1/2 tsp of vanilla extract (optional)


Directions

Add ingredients into desired container.

Stir ingredients.

Leave in fridge overnight.

Serve cold.

Store extra burritos in the freezer for quick meals in the morning.

MEXICAN BREAKFAST BURRITO

Ingredients

6 large eggs

2 oz lean turkey sausage

1 medium avocado

4 medium tortilla, whole wheat

1/2 chopped bell pepper

1/2 cup chopped onion

1/4 cup sliced jalapenos (optional)

Desired amount of cilantro (optional)

1/2 cup cheddar cheese, shredded (fat free/low fat cheese is recommended) 

1/2 cup salsa

Directions

1. Whisk eggs together in a bowl.

2. Pour into a skillet and cook over medium-high heat until no longer runny, stirring occasionally to scramble.

2. Slice or mash avocado and add to tortillas, followed by cheese and salsa.

3.Top with scrambled eggs.

4. Roll the tortilla up like a burrito.

HAM AND CHEESE OMELETTE

Ingredients

2 whole eggs

2 egg whites

1/4 cup diced/sliced ham

1/3 cup fat free/low fat cheese

1/4 cup onion

1/4 cup mushrooms

Directions

1. Drizzle a small amount of oil in pan and sauté onions and mushrooms until soft and put aside.

2. Whip the eggs and egg whites and pour mixture into bowl.

3. Salt and pepper to taste.

4. Finish off by arranging veggies and cheese then folding omelette in half.
